Traditional Rum Sauce
Some pour cream over it and some scoop brandy butter onto it but the traditional accompaniment to Christmas Pudding is Rum Sauce, a delicious pouring custard laced with dark rum.
Free from: dairy, gluten, wheat, egg. Vegan
• 2 tbsps cornflour
• 1 tbsp demerara sugar
• 8 floz / 225ml Provamel Soya Dream
• 12 floz / 330ml rice milk
• 2 tblsp dark rum
In a small jug or bowl mix the cornflour to a thin paste with a tablespoon of rice milk
Put the remaining rice milk and the Soya Dream in a saucepan with the sugar and vanilla extract and stir over a medium heat until the sugar has dissolved. Bring slowly to the boil. Reduce the heat.
Using a balloon whisk, stir in the cornflour mixture and bring slowly to the boil until the sauce thickens, whisking all the time to avoid lumps.
Add the rum, stir in and heat through.
Serve in a warmed jug.
