Gluten-free Cooking
Written in association with Coeliac UK
Coeliac disease is an adverse reaction to gluten, the main protein in wheat and related grains rye, barley and oats. The disease runs in families and can begin at any age, even if the person has previously eaten gluten without problem. In addition, some sort of trigger such as a bad accident, a viral infection or even pregnancy may set it off.
People with Dermatitis Herpetiformis, which shows as itchy blisters mainly on the back of the elbows and forearms, the buttocks and the front of the knees also have a very mild form of coeliac disease and a gluten-free diet is prescribed as treatment.
If tests have shown you have coeliac disease you'll have to avoid gluten and Gluten-free Cooking, written in association with Coeliac UK, is a super little paperback that offers sound explanations and advice and over 60 nutritionally analysed recipes. There are mouthwatering treats such as Thai Coconut Chicken and Strawberry Meringue Roulade and children's favourites like Pizza Margherita and Rainbow Lollies.
Author Lyndel Costain is an award-winning state registered dietician, health writer and broadcaster on radio and television. She is passionate about the importance of correctly diagnosing and treating coeliac disease. Co-author Joanna Farrow trained as a home economist and writes as a freelance for BBC Good Food. Together they offer expert advice on symptoms, treatments and dietary considerations.
